Tomato Basil Soup

Rich, creamy, and packed with the natural sweetness of ripe tomatoes, this soup is an ode to fresh, simple ingredients. Paired with fragrant basil, it makes a comforting meal perfect for cool days. Serve with a grilled cheese sandwich for an unbeatable combo.

Ingredient

1 can crushed tomatoes (400g), 1 onion (chopped), 2 garlic cloves (minced), 1/4 cup fresh basil (chopped), 1 cup water, salt, pepper

Method

    Heat 1 tablespoon of oil in a pot over medium heat. Add the chopped onion and garlic, cooking until the onion is soft, about 5 minutes.


    Add the can of crushed tomatoes, water, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.


    Stir in the fresh basil and blend the soup with an immersion blender until smooth. Serve with a slice of bread for dipping.
