Scrambled Eggs with Tomatoes

A simple yet flavorful dish of soft scrambled eggs cooked with juicy tomatoes. Popular in Chinese cuisine, it’s a quick and healthy meal that’s perfect for breakfast or a light dinner.

Ingredient

2 tomatoes, 3 eggs, salt to taste, lightly chopped green onion, oil to taste

Method

    Wash and cut the tomatoes and beat the eggs.


    Add oil to a wok, pour in the egg mixture, fry until set and remove.


    Add more oil to the pan and add tomatoes until soft. Season with a little salt.


    Pour in the scrambled eggs, stir well, sprinkle with green onion and serve.
