One-Pan Chicken & Veggies

A no-fuss, hearty meal that’s all cooked in one pan. Juicy chicken thighs are roasted alongside colorful vegetables, all seasoned with herbs and spices, for a wholesome dinner that’s both easy and satisfying.

Ingredient

2 chicken thighs, 1 potato (cubed), 1 carrot (sliced), 2 tbsp olive oil, salt, pepper, herbs (thyme, rosemary, etc.)

Method

    Preheat your oven to 200°C (400°F).


    Toss the chicken thighs, potato cubes, and sliced carrot in olive oil. Season with salt, pepper, and your favorite herbs.


    Spread everything on a baking sheet and roast in the oven for 25-30 minutes, until the chicken is fully cooked and the vegetables are tender. Serve immediately.
