Braised Eggplant

Silky, tender eggplant cooked in a savory sauce until it absorbs all the flavors. This dish is a perfect side or vegetarian main, offering deep, comforting flavors with a melt-in-your-mouth texture.

Ingredient

2 eggplants, 2 cloves of garlic, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp white sugar, salt to taste, oil

Method

    Wash and cut eggplant, salt and marinate for 10 minutes, then squeeze dry.


    Heat pan with oil and fry eggplant until soft.


    Add minced garlic and fry until fragrant. Add light soy sauce, dark soy sauce and white sugar, stir well.


    Simmer over low heat for 2 minutes and serve.
