Zucchini Fritters
Crispy on the outside and tender on the inside, these zucchini fritters are light, flavorful bites that make a perfect appetizer or snack. With a hint of herbs and a golden-brown finish, they’re delicious with a dollop of sour cream or yogurt.
Ingredient
2 zucchinis (grated), 1 egg, 1/4 cup flour, 1/4 cup grated cheese, salt, pepper, 1 tbsp oil
Method
- Place the grated zucchini in a clean towel and squeeze out any excess moisture.
In a bowl, mix the zucchini with the egg, flour, cheese, salt, and pepper.
Heat oil in a pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten slightly.
Cook for 3-4 minutes on each side, until golden brown. Serve warm.
